Wheat is the most common cereal grain. The whole grain kernel of wheat, composed of bran, wheat germ and endosperm, is an immense energy source. Wheat arises in Southwestern Asia, but today it is one of the top grain crops grown in several countries for human consumption. Commonly, wheat cultivation is done at higher latitudes.

Wheat is one of the oldest and most important of the cereal crops. Of the thousands of varieties known, the most important are common wheat used to make bread, pasta, spaghetti and macaroni, cake, crackers, cookies, pastries and flours, production of starch, paste, malt, dextrose, gluten, alcohol, and other products. 

Bread wheat or common wheat, is the primary species. Several other closely related species include durum, spelled, emmer, einkorn and Khorasan wheat.

Wheat is an ancient grain. Thought to have originated in southwestern Asia, it has been consumed as a food for more than 12,000 years. Greek, Roman, Sumerian and Finnish mythology had gods and goddesses of wheat. 

As rice has been the dietary staple of Asia, wheat has served this role for many other regions of the world. It is estimated that approximately one-third of the world's people depend upon wheat for their nourishment. 

Today, the biggest commercial producers of wheat include the Russian Federation, the United States, China, India, France and Canada. 

There are six types of wheat: Hard Red Winter, Hard Red Spring, Soft Red Winter, Durum, Hard White Wheat and  Soft White Wheat.

Cancer-killing properties

Wheat acts as an anti-carcinogenic agent, particularly in women. When estrogen levels increase and reach an excessive level, it leads to breast cancer. Wheat bran optimizes estrogen levels so that they stay controlled at all times and preventing breast cancer. This is especially effective in premenopausal women, who are generally more at risk for developing this type of cancer.

Buy wheat packaged that sealed properly (especially those that are vacuum packaged).

Storage

Wheat should be stored in an airtight container in a cool, dry and dark place. The optimal way to store wheat products such as flour, bulgur, bran and germ is in an airtight container in the refrigerator as the cooler temperature will help to prevent them from becoming rancid.
